Home Cheesemaking with Ricki Carroll

If you've ever wanted to learn how to make cheese in your kitchen, this class is for you. Under the direction of Ricki Carroll, author of Home Cheese Making, participants will learn the basics of making simple hard and soft cheeses. The class will break into small groups to learn how to make Farmhouse Cheddar, Fromage Blanc, Crème Fraiche, Queso Blanco, Mascarpone, Ricotta, Mozzarella, whey cheeses and more. Through hands-on practice, we'll learn the basics principles of cheesemaking, care and use of equipment, and what types of milk to use. There will be a one hour break for a delicious lunch with a sampling of our tasty cheeses.

Dubbed "the Patron Saint of Specialty Cheeses" by Jonathan White and known as "the Cheese Queen" by her fans, Ricki Carroll has been teaching cheesemaking workshops across the country for over 20 years. Her company, The New England Cheesemaking Supply Company, provides cheesemaking equipment and ingredients for home and artisanal cheese. Ricki's enthusiasm for cheesemaking is contagious and she happily shares her expertise.

The State College Friends Meeting House is located at 611 E. Prospect Ave, State College, PA 16801. More information about the Meeting House can be found at http://www.statecollegefriends.org/location.htm. All inquiries regarding registration and the class should be directed to Heather House at PASA at 814-349-9856 ext. 2.

From 322 Bypass (Mt. Nittany Expressway) take the State College/Route 26 exit. Turn south onto Route 26. Follow 26 south for approximately 1.2 miles to the Penn State University exit. When you take this exit, stay in the left lane, turn left at the light onto University Drive. Go 3/10 of mile on University and turn right onto E. Prospect. (landmark: there will be a Burger King on the left where you turn right onto E. Prospect) Just a little over 1/10 mile and the State College Friends Meeting House will be on your right.

From I-80: Take exit 158 to 220 south. Go to 322 Bypass south/east and follow directions above.

From southwest: Take I-99 to Rt. 220 north. Go to 322 bypass east towards State College and follow directions above.
